I’m looking forward to trying the turkish-style aubergine and lentil casserole – I really like the way Wheatless Bay amend the recipes freely, depending on what’s available. I don’t have pomegranate molasses in my cupboard, so I might follow the Wheatless Bay version and use honey and lemon. It’s a long slow cook this one, so I’d better go and get it started …

Yes – very interesting. I usually just thicken sauces with cornflour – I’ve never tried making a roux with rice flour. Something to add to the to do list …
